Takes ~25 mins and makes 10 small hashbrowns, feel free to double the recipe to make more or large ones.
Ingredients
- 1 large baking potato
- ½ white onion
- 1 flax egg (1 tbsp ground flax seed + 3 tbsp water)
- 3 tbsp flour
- 1 tbsp vegetable oil
- Salt and pepper to taste
Method:
- Preheat oven to 200C
- Grate potato, leave skin on!
- Combine grated potato with finely chopped onion, flax egg and flour. Season with salt and pepper.
- In a non stick frying pan heat 1 tbsp of vegetable oil. Form your hashbrowns in your hand- make into golf ball sized spheres, place into the frying pan and spread out with the back of a turner.
- Fry both sides until lightly browned, place on a baking tray.
- Bake for 15 mins.
