Ingredients
- 1 can of chickpeas
- 2 sheets of sushi nori
- 1 tbsp soya sauce
- 100g sweetcorn
- 2 tbsp vegan mayo
Method
- Drain the chickpeas and mash with a fork until every chickpea is broken up.
- Roughly chop the nori sheets and then add to the bowl with the chickpeas, then add in the soya sauce, sweetcorn and mayo. Stir everything together.
This will fill 3-4 sandwiches depending on how thick you fill them.
You could also stir it into cooked pasta and bake in the oven to make a tuna pasta bake or have it on a jacket potato.
