Ingredients
- 2 tbsp ground flax seed mixed with 6 tbsp water
- 3 over-ripe bananas
- 100g golden caster sugar
- 80g vegetable oil
- 1 tsp vanilla essence
- 100ml soya milk (or nut milk of choice)
- 250g self-raising flour
- 1 tsp bicarb
- Pinch of salt
- 50g chocolate
Method
- Preheat oven to 180C and grease a loaf tin and line with re-usable baking parchment.
- Mix the flaxseed with the water to make the flax egg and leave to thicken.
- Mash the bananas with a fork and combine with sugar and oil.
- Mix in the flax mixture, vanilla and soya milk.
- Fold in the flour, bicarb and salt.
- Stir in chopped up chocolate.
- Pour into tin and bake for 45mins or until a skewer comes out clean. (If you can avoid temptation it is best to wait until it has cooled to cut it).
